I had potato salad at a vegan izakaya (Japanese-style tapas place/pub) in Osaka, Japan when I went home last year. It was so good so I had to ask the restaurant how they make it. The secret was dashi (Japanese-style broth). I am attempting to recreating the potato salad that I had.
Besides using dashi, what makes this potato salad Japanese is potatoes are mashed. Potatoes salad in Japan are mashed and smooth. Today, I am mashing half way so it still has some texture. Many times other ingredients such as ham and cucumbers are added to potato salad in Japan but I only used thinly sliced onion only today because that’s how it was made at the vegan izakaya.
It’s pretty simple to make. Let’s begin!
- Make vegan Japanese dashi
2. Boiled potatoes until they become soft and drain water.
3. While potatoes are hot, mash about half of them with a fork.
4. Slice onion thinly and massage with a small amount of salt
After you massage with salt, onion gets softer and wet.
5. Soak sliced onion in water for a few minutes
6. Rinse onion to remove salt and squeeze out water
7. Mix vegan mayonnaise and dashi. I have a couple of vegan mayonnaise recipes (non-oil cashew and tofu mayonnaise and non-oil tofu mayonnaise)
8. Mix cooked potatoes, onion, mayonnaise and dashi mixture. Add salt and black pepper to taste.
It’s creamy and has “umami” taste from dashi. I sprinkled chopped green onions for color.

- 4 small potatoes (2 cups peeled and chopped)
- ¼ small onion
- 4 tablespoon vegan mayonnaise
- 1 tablespoon basic vegan Japanese dashi
- ½ to 1 teaspoon salt
- black pepper to taste
- Make basic vegan Japanese dashi
- Peel and chop potatoes
- Boil potatoes until they become soft and drain water
- While potatoes are hot, mash about half of them with a fork
- Slice onion thin and massage it with a small amount of salt
- Soak onion in water for a few minutes
- Rise onion to remove salt and squeeze out water
- Mix mayonnaise and dashi
- Mix potatoes, onion, mayonnaise and dashi mixture. Add salt and black pepper to taste
