Japanese-style Dashi Potato Salad

Ingredients
  • 4 small potatoes (2 cups peeled and chopped)
  • ¼ small onion
  • 4 tablespoon vegan mayonnaise
  • 1 tablespoon basic vegan Japanese dashi
  • ½ to 1 teaspoon salt
  • black pepper to taste
Instructions
  1. Make basic vegan Japanese dashi
  2. Peel and chop potatoes
  3. Boil potatoes until they become soft and drain water
  4. While potatoes are hot, mash about half of them with a fork
  5. Slice onion thin and massage it with a small amount of salt
  6. Soak onion in water for a few minutes
  7. Rise onion to remove salt and squeeze out water
  8. Mix mayonnaise and dashi
  9. Mix potatoes, onion, mayonnaise and dashi mixture. Add salt and black pepper to taste
