Japanese-style Dashi Potato Salad

- 4 small potatoes (2 cups peeled and chopped)
- ¼ small onion
- 4 tablespoon vegan mayonnaise
- 1 tablespoon basic vegan Japanese dashi
- ½ to 1 teaspoon salt
- black pepper to taste
- Make basic vegan Japanese dashi
- Peel and chop potatoes
- Boil potatoes until they become soft and drain water
- While potatoes are hot, mash about half of them with a fork
- Slice onion thin and massage it with a small amount of salt
- Soak onion in water for a few minutes
- Rise onion to remove salt and squeeze out water
- Mix mayonnaise and dashi
- Mix potatoes, onion, mayonnaise and dashi mixture. Add salt and black pepper to taste
