In Japan, probiotic fruit syrup is commonly made with lemon. I like to make it with lemon but I added yellow peach to see how it tastes. The result was amazing! It is fragrant and has a nice peachy taste. This is my new favorite probiotic syrup.
So what is probiotic syrup?
It’s basically syrup made by fermenting fruits. I can share a couple of tips to make this syrup successfully.
You need to:
1. Use white cane sugar. Other types of sugar don’t work. Yes, I tried.
2. Mix fruit and sugar everyday with your hands. Yes, you need to use your hands. Bacteria living in your hand helps the fermentation process.
3. Keep it to a warm place. I usually leave it by the stove.
All you need to do is mix and wait! I’ll show the step-by-step instructions just in case you want to follow what I do. The shorter version of the recipe and the list of the ingredients are at the bottom of this post.
- Slice lemon and peaches, not too thick and not too thin.
2. Put fruits and sugar in a jar. First fruits them pour sugar and repeat. As you pour sugar, push sugar to the bottom of the jar to let the air out.
This is how it looks after you put everything in a jar.
Day 2: Sugar was almost dissolved.
Day 3: Sugar was dissolved.
Day 6: The color got darker.
Day 13: It’s ready!
When you see the syrup is bubbling, it’s ready to use. It takes about a week if you are in a warm area. I live in a cool area so it takes me a couple of weeks.
You can mix it with flat or sparkling water to drink. I like to mix it with rejuvelac and make double probiotic effect. 🙂

- Slice fruits
- Put fruits and sugar in a jar and wait until it starts to bubble.
