I go to a farmers market or markets (sometime I go to more than one!) every weekend to get most of what I eat. I saw a gigantic fresh spinach at a farmers market this week and was inspired to make spinach ohitashi (ほうれん草のおひたし). It’s boiled spinach with Japanese sauce.
You can find this dish at some Japanese restaurants and at many izakayas (Japanese tapas style restaurants). It’s usually has fish broth and dried fish (bonito) flakes so it’s not vegan. But it’s easy to veganize this dish!You can eat a lot of spinach when you make this dish. It’s simple and healthy. It’s a perfect low fat spinach dish when fresh spinach is available. I’ll share step-by-step instructions but a shorter version of this recipe is available at the bottom of this blog post.
- Blanch uncut spinach for 30 seconds. Put the root first.
2. After removing spinach from boiling water, shock spinach with cold running water.
3. Squeeze water out of spinach by hands. Then, pat down spinach with paper towel to remove more moisture.
4. Cut spinach into 1 1/2 to 2 inch length.
5. Mix all sauce ingredients in a bowl by hand. The recipe for dashi (broth made out of dried kelp and shiitake mushroom) will be posted next. 🙂
6. Slice shiitake mushroom which was used to make dashi (broth) thinly. This is optional but it makes this dish look pretty, and it’s a good way to eat shiitake after you make dashi.
7. Place spinach into a bowl and garnish with shiitake mushroom
8. Pour sauce and sprinkle ground toasted sesame seeds (optional)
This will be a nice side dish. You can adjust the amount of soy sauce and sugar to your taste. Please check out the next posting to learn how to make the basic vegan Japanese-style dashi (broth).
- 1 large bunch of spinach or 2 small bunches of spinach

- ⅛ cupdashi (broth made out of dried kelp and shiitake mushroom)
- 1 teaspoon soy source (substitute: coconut amino, tamari)
- 1 teaspoon coconut sugar (substitute: any sugar of your choice or sweeter)
- *Garnish
- Soaked dried shiitake mushroom which made dashi
- (Optional: ground toasted sesame seeds)
