One day I stumbled upon a recipe for salted tofu. When I made it and tasted it for the first time, I thought the texture was similar to a hard-boiled egg white. Before I discovered salted tofu, I found avocado sprinkled with black salt tastes like egg york. So I figured I could make vegan hard-boiled egg by mixing salted tofu and avocado with black salt! This “vegan hard-boiled egg” has the taste and the texture similar to a real hard-boiled egg. It’s just the color is off. It’s green. If you don’t pay too much attention to the color, you feel like you are eating hard-boiled eggs!
It’s easy to make once salted egg is made. I’ll post the recipe for salted egg in my next blog. Let’s make vegan boiled eggs!
- Cut salted tofu into small cubes
2. Mash avocado and sprinkle black salt and black pepper
3. Add cubed tofu into mashed avocado and mix. Mash tofu slightly.
It tastes more like a real egg if you put more avocado than tofu.
My favorite way to eat this “vegan boiled eggs” is to put on lettuce. I just like this simple way to eat so I can taste “eggs.”
These vegan boiled eggs are good to make a sandwich too. I didn’t add mayonnaise because it’s already pretty creamy but mayonnaise will take it to the next level!
If you want to try a egg alternative, this may be a good one. It really reminds me of eggs but it’s healthier.
- ¼ pack salted tofu
- ¼ to ½ avocado
- ⅛ to ¼ teaspoon black salt
- Black pepper to taste

Looks delicious! I would love to try making this recipe, but am not sure if I can find salted tofu in my part of the world. Could you tell us what the package looks like, or what the Chinese name is so we can find it at a grocery store or ask a clerk?
