I love jackfruits but it isn’t always easy to find fresh ones where I live (San Francisco, CA). Whenever I see nice fresh one, I had to get them.
I stopped by an Asian/Latin market to get some mangoes and found a section of fresh jackfruit. It had nice yellow color and looked fresh. I was ready to dig in as soon as I get home then I remembered I had some nectarines needed to be eaten at home. I knew I needed to eat ripe soft nectarines because they won’t last another day but I really wanted to eat jackfruit I just bought.
The solution was this recipe! I decided to blend them together and see how it tastes. It was actually pretty tasty. I love the taste of jackfruit but not the texture so much. I find it’s tough to chew and sometime I have indigestion from eating too much jackfruit. Blending it make it easier for me to digest. There is no step-by-step instructions today. All you need to do is blend jackfruit and nectarines.
The constancy of the mixture is thick pudding. It has a nice floral-like scent from nectarines. I may actually like this mixture more than jackfruit itself. I topped it with cut jackfruit and nectarines and shredded coconuts to make it pretty. 🙂
