I posted how to make vegetable sushi rolls last time. In order to be sushi, you need to use “sushi rice.” Sushi rice is called “sumeshi” (酢飯) or “sushimeshi” (寿司飯) in Japanese. Sushi rice is mixed with sushi vinegar. Sushi vinegar is seasoned vinegar and can be purchased at Japanese supermarkets. But it’s so easy to make so why not make it yourself?
I’ll show the step-by-step instructions here but the shorter version of the recipe and the list of ingredients are available at the bottom of this blog.
- Rinse rise until water become almost clear. This removes excess starch and makes rice smell nice. When you first pour water into rice, water is cloudy.

2. Cook rise with water slightly less than normal. This is because sushi vinegar will be added later.
3. While rice is cooking, make sushi vinegar. Pour all ingredients into a small pot and simmer. It doesn’t need to be boil. It just need to be warm enough to melt salt and sugar. I am using brown rice vinegar and coconut sugar so my rice vinegar is brown. Traditionally, this is made with rice vinegar (clear one) and white sugar so vinegar is clear.
4. When salt and sugar are melted, remove sushi vinegar from pot to cool down.
5. When rice is cooked, keep it in a rice cooker or a pot for 10 minutes.
6. Remove rice from a rice cooker or a pot. I’m using a ceramic bowl here. Traditionally, wooden bowl is used.
7. Mix sushi vinegar while rice is still hot.
Pour sushi vinegar.
Stir. When stirring, try not to mash rice.
Life rice from the bottom of the bowl.
Almost like cut rice.
When it’s mixed, rice should be shiny.
I also made the semi-brown rice version.
8. Wait until rice cools down to use for sushi. Cover the bowl with a towel to avoid rice being dried out.
When it’s ready to make sushi, you have perfect sushi rice!
- ¾ cup short grain rice
- ¾ to 1 cup of water
- *Sushi Vinegar*
- 2 tablespoons rice vinegar
- 1 tablespoons sugar
- ½ teaspoon salt
- Rinse rice until water is almost clear.
- Cook rice with slightly less water than usual
- Mix sushi vinegar ingredients in a small pot and simmer until salt and sugar melt
- Remove sushi vinegar from the pot and cool it down
- When rice is cooked, leave it in a rice cooker or a pot for 10 minutes
- Remove rice from a rice cooker or a pot and mix sushi vinegar while rice is still hot
- Wait until rice is cooled down to make sushi
