Kuzumochi (Kudzu Mochi)

Ingredients
  • 2 oz (57 gram) kudzu
  • 10 oz (300 cc) water
Instructions
  1. Mix kudzu with water in a pan until kudzu is dissolved.
  2. Heat the kudzu and water mixture over high heat to bring to boil. Continue stirring. If you don't stir, kudzu gets thicken at the bottom of the pan.
  3. When kudzu reaches boiling, turn heat to medium to low and continue stirring.
  4. After a few minutes, kudzu is getting thicken. When it gets thicken, the color starts becoming translucent.
  5. Continue stirring and cooking until kudzu becomes shiny and translucent and get thicken
  6. Remove the pot from heat. Scoop kudzu mixture with a spoon and drop it in cold water.
  7. Drain water.
