Basic Japanese Dipping Sauce for Noodles

Instructions
  1. Soak dried shiitake mushroom and kombu in water and leave it for a few hours to make dashi (broth)
  2. Remove dried shiitake mushroom and kombu from water
  3. Melt sugar in hot water and poor into ½ cup dashi (broth). Save the rest of dashi for other uses.
  4. Add soy sauce and salt into dashi and mix well
