Gluten-free Vegan Crumbly Sponge Cake

- 120 grams (about 1 cup) rice flour
- 27 grams (about ¼ cup) potato starch
- 10 grams (about 1½ teaspoons) baking powder
- ½ cup soy milk
- 2½ tablespoons neutral taste vegetable oil
- 1 tablespoon and 1 teaspoon maple syrup
- 1 tablespoon neutral taste sugar
- Pre-heat oven at 340 degrees F (170 degrees C)
- Mix soymilk and oil very well in a bowl with a whisk
- Add sugar and maple syrup and mix well
- Add rice flour, potato starch and baking powder and mix well with a spatula
- Pour the batter into a pan lined with a parchment paper
- Based for 20 minutes or so until it baked completely
