Gluten-free Vegan Crumbly Sponge Cake

Ingredients
  • 120 grams (about 1 cup) rice flour
  • 27 grams (about ¼ cup) potato starch
  • 10 grams (about 1½ teaspoons) baking powder
  • ½ cup soy milk
  • 2½ tablespoons neutral taste vegetable oil
  • 1 tablespoon and 1 teaspoon maple syrup
  • 1 tablespoon neutral taste sugar
Instructions
  1. Pre-heat oven at 340 degrees F (170 degrees C)
  2. Mix soymilk and oil very well in a bowl with a whisk
  3. Add sugar and maple syrup and mix well
  4. Add rice flour, potato starch and baking powder and mix well with a spatula
  5. Pour the batter into a pan lined with a parchment paper
  6. Based for 20 minutes or so until it baked completely
