I love amazake (甘酒). It’s a vegan milky sweet rice drink and delicious to just drink but it can be used as a sweetener. You can find how to make amazake in my previous post. This healthy vegan ice cream is so easy to make. It requires just two ingredients – amazake and cashew nuts , and all you need to do is blend them together.
You can use the blended mixture as cream too. It will be nice to eat it with cut fruits of your choice. Homemade amazake doesn’t last more than a week so I like to freeze it when I make a large batch. Plain frozen amazake is nice too. It’s like sorbet. If you like something more creamy, blend it with your choice of nuts and seeds. I found the taste of cashews is mild and goes well with amazake.
- 1 cup amazake1/2 cup cashews - soaked in water for at least two hours
- Blend amazake and cashews in a blender until the mixture become very smooth.
- Freeze the mixture and enjoy!
