I like bananas when they are mixed with something else. For some reason, I don’t like to eat bananas as is. I guess I don’t care for the taste and the texture much so I usually use bananas in smoothies with other fruits to camouflage the taste and the texture. Today I’ll make a banana-smoothie like dessert using amazake. I posted a recipe to make amazake two month ago. Amazake is made of rice and very sweet. You can mix amazake with water to enjoy a plain amazake drink or use it as a sweetener. Today’s recipe requires only three ingredients – amazake, banana and kinako.
What’s kinako (きな粉)? Kinako is a powder form of roasted soybeans. It is used in desserts in Japan. You may have seen mochi with kinako. You can find kinako at Japanese supermarkets. It usually comes in a small bag.
Kinako itself is not sweet. We usually mix it with sugar or a sweetener to sweeten it. When I was a child, I didn’t like kinako. I thought kinako was too dry and it kinds of choke me when I ate it. As I get older, I became more open to desserts with kinako but wasn’t a big fan until I found this dessert. I learned about amazake-banana mixture with kinako recently at a cooking class by Shinobeau M. I love pouring a lot of kinako to eat this dessert.
There will be no step-by-step instructions today becauase all you need to do it just blend amazake and banana!
After you blend amazake and banana well, pour the mixture into a glass or a bowl and sprinkle as much kinako as you like. You may find it odd to have soybeans with smoothie but believe me it’s tasty!
- ½ cup amazake3 banana - frozen or fresh
- kianko (soybean flour) - as much as you want
- Blend amazake and banana in a blender
- Sprinkle kinako on top
